How are the number of pages in a document counted?

Sometimes there is confusion about the difference between what is a sheet of paper and what is a page. They are not the same. For example, a booklet has (2) sheets of paper that are folded and saddle stitched (stapled) along the fold, joining together the folded sheets. This booklet contains (8) pages.
